英語のレストランメニュー翻訳のヘルプお願いします！

海外のリゾートホテルで働いています！レストランのメニューの翻訳を頼まれ、専門の方に教えていただきたいです！！ mango jubileeってなんですか？デザートメニューの中にSteamed Fruit Pudding -Hot Fruit Pudding served with vanilla ice cream and mango jubileeとあります。どう訳せばいいでしょうか？また、pasta with peppered tuna and blue cheese-with fresh cream,peppered tuna, blue cheese and balsamic reductionのbalsamic reductionがわかりません。バルサミコ酢のリダクションとは？？よろしくお願いいたします！あと、Baked US beef top blade in clayはUSビーフ肩肉　かまど焼きでよろしいでしょうか？

    豆腐料理店のメニューの英訳を頼まれ、現在辞書とインターネットを頼りに格闘していますが、ちょっとわからない問題に突き当たりました。 「生麩と海老の道明寺蒸し」という料理があります。 道明寺蒸しというのは簡単に言うと、お餅を具と一緒に蒸しあげたものです。 しかし写真を見てみると、切り餅のような餅ではなくもち米をそのまま柔らかく蒸しあげたような（米の粒々感が残っている）感じです。 （厳密には「道明寺粉」というのを使っていて、又ちょっと違うのですが。） さらに蒸した上に「あん」（とろみのついたソース）をかけてあるとのことです。 それで、餅についてはよく使われる"Rice Cake"ではなく"Sticky Rice"にして 「steamed Fu(wheat gluten), shrimp and sticky rice with starchy sauce」 としてみました。 同じ「ネバネバ」の意味のstickyとstarchyを続けて使うのはどうかと思ったのですが、いかがでしょう？ どちらかに揃えたほうが良いのか、それともそもそも繰り返すのは良くないのでしょうか？ アドバイスお願いします。
