one more day とか、three more days のように、 more ＋名詞の前に数詞がつく表現もあります。 しかし、ここでは three years older (than ～) 「～からより３歳年上」のような形になっています。 すなわち、three more days というと、day について、３多い、ということですが、 ここでは「３日多い」何か、ということになります。 older なら年齢、ということになりますが、 ここでは more によって、休みの日が多い、ということになります。 much of this rest なら「この休みのうちの多く（の部分）」 この much が more になっています。 three days more of ～ となると、この休みのうちの、あと３日分 となります。
