文の構造についての解釈は質問者の理解でよいとおもいます。 この場合 no denying は拒否ではなく、ある事実を 否定できない と言うことです。 ですから訳すとすれば 親が、赤ん坊が寝ている間に、楽に呼吸ができるようないくつかの簡単な対策を講じることで、後から悲嘆にくれるようなことにならなくてすむことも確かなのだ。 最初の That maybe going a bit far, but は前の文が分からないのであいまいですが。go too far が比較的広い意味を持つので 事はもっと複雑（発展する、悪い結果になる）になるかも知れないが、 など前の文章にあうように訳すようにします。
