質問

not は、don't とか　isn't のように、短縮形で書くこともできますか？
辞書を見ると、短縮形で出ている例文が無いのでどうなのかなと思いました。

not only A 　but also も短縮形で書けますか？

not only . . . but also . . .の形は、電子辞典で数百の用例にあたりましたが、見当たりません。
They're not only . . .
He's not only . .
などのように、
They aren't . . .
He isn't . . .
としていないなども、短縮形でnotを使わない方を選んでいるものと思われます。

他にもbe動詞の短縮がいくつかありましたが省略。

以上のようなbe動詞の短縮形は見つけやすいのですが、一般動詞の場合、英米の例は見つけられませんでした。

の形ですと辞書に用例が見つかります。

not only ... but also ...
における短縮形は、あまり使わない。とくにbe動詞でない場合、実際に英米では使われていないと言えると思います。

is not only ... but also, や do not only ... but also などの語順であれば可能です。

The nurse was not only competent but also kind.
この文では isn't の短縮が可能です。

無理だと思います。
I dislike not what you say but the way you say it.(あなたの言うことではなく言い方が嫌なのだ)
という文で、短縮形を用いた場合、嫌いだということを肯定しているのに否定文になってしまいます。多分こういうことです。
家にある英語の教材を複数見ましたが、何れにも短縮形が用いられているものはありませんでした。
