最初から行きますと、「each」=「各々、それぞれ、各人」という意味ですよね。鈴木さんと佐藤さん、二人共、それぞれ、です。その際の「相手」は「二人いる内の、自分ではない相手の人」で確定しますね。つまり相手は「どちらか」「either」ではないですね。「相手」は必ず「当人本人以外のもう一人の人」、ですから、この場合は「the other」です。 もし、この文章で、三名以上の場合は、、、、「the others」と複数形に、、、但し、少し書き換えを必要とします。「neither」→「all」と書き替える必要有りますね。「neither」は「二人の内どちらも、、でない」 For a moment all of them spoke. Indeed everything had been said and each understood the others perfectly. 教訓その一 「ありきたりの易しい日本語」を英訳するのは「難しい日本語」を英訳するより遙かに難しい。

２人の人間が話し合った後の描写ですよね。「Each understood the other」で、「各自、相手の言った事を理解した」という意味の文です。Eitherですと文法的にもおかしいですし、意味も通じないです。
