割と難しい問題です。私の案は 1, There has been a decrease in the (amount of) fruit consumed by ..... 2, The graph shows the (number of) tourists who visited... 3, Pollution (level) in industrialized countries increased... 4, The population (level) for developing counties are... 5, In summer the (amount of) ultraviolet in sunlight is .... 6, Large (amount of) palm oil are... 7, Solar panels and wind farms can generate a large (amount of) power 8, Increasing (number of) schoolchildren are... quantity は物理的に測り得る理系的「量」を表しますが、amount はお金などもう少し人間生活につながる「大きさ」「総量」を表す人間的表現とでも言えば良いでしょうか。果物、紫外線、油、電力などは人間生活につながる議論という意味で amount の方が普通はよいでしょうが、quantity でも意味は通じますので、その点では難問です。 number は一つ二つ(一人二人)と数えられるものに適用します。 pollution, population などは数えるというよりも統計量という意識で level が相応しいと思われます。
