ある英文で意味がわからないことがあります
as a trainee working in the kitchen of a luxury hotel, I was always warnd against eating on the job. この文章の as a trainee working in the kitchen of a luxury hotel, この部分なのですが asは「～の時」という意味で使われていると思うのですが この文章の中に動詞が無いような気がします。 warkingは現在分詞で形容詞の役割ではないですか?

as を 「～の時」 と取るなら、When I was a trainee ... というのと同じことです。as を使うと as (being) a trainee の being が省略されたと見ることも出来るかもしれません （being は略されるのが普通です）。 as の次にその職種なり立場なりを表す名詞が続きます。その文の場合には 「a trainee としての立場にあった時に」 ということになります。 working はおっしゃるとおり、その前の a trainee という名詞を修飾しています。余分なものを取って簡単にすると、As a trainee, I was always warned against ... となります。 だから全体としては 「私がその豪華なホテルの厨房で見習いとして働いていた頃は、仕事中にものを食べるなといつも注意された」 という意味になります。

asは、「～として」という意味ではありませんか？ 訳は、 「豪華なホテルの厨房で働く訓練生として、私は常に 仕事で食事をすることのないよう警告されていた」 といったところでしょうか。

as 名詞で基本、「～として」という前置詞。 as a boy のような場合に「子供のころ」というのはあります。 これも前置詞です。 as SV で「～する時」という接続詞とは別とお考えください。 working ～はおっしゃるように形容詞的に trainee にかかり、 「豪華なホテルの厨房で働く（普通には働いている、なんでしょうけど）研修生として、 職務中にものを食べるな、といつも警告を受けていた」
asが接続詞の～の時ではなく、前置詞の～として、だからでは。
