so＋形容詞＋that・・・あるいはsuch＋名詞＋that・・・は、#1の方がおっしゃるように 「あまりにも何々（名詞または形容詞）なので・・・である」といった意味の程度・結果を表す定型の言い方です。 ですからnotがついた場合にはこの言い方の否定、即ちご質問の例で言えば、 she is such a fool that she believes what you have said（彼女はあまりに愚かなのであなたの言うことを信じる）に対して、 she is not such a fool that she believes what you have said（彼女はあなたの言うことを信じるほど愚かでない）＝肯定文の全否定の形となります。これも決まった言い方として覚えてしまった方がいいですね。 ちなみに「彼女は愚かでないので君の言うことを信じる。」は、特に形にこだわらないのであれば、 She believes what you say because she is not foolish (foolish を a foolとすると馬鹿者という意味になってしまいます・・笑）. でいいと思いますよ。

That is word for word what was said.
