he/sheを使うのは「人間であること」を英語圏の文化では前提としていると思います。 ただ、その動物が筆者にとって身近なものである場合he/sheを使うことが多いです。これは親しみを込めた使い方であり、固い表現が必要とされる場合は相応しくないと思います。 「昔、習った英語では"it"と呼ぶのは性別が不明な場合の非常手段で、全く不適切だ」というのは筆者に対する配慮があるからだと思います。本来、動物は性別が分かっていても「it」であるべきだと思います。

ペットのような場合は家族みたいなもので雄雌に応じて he, she を使うこともありますが、 ペットの場合も含めて動物を it で表すのは至って普通です。 非常手段でも何でもありません。

普通は動物にはit使いますよ。 自分のペットなんかの場合はhe/she使ったりもしますが、動物を指す場合は普通はitです。

いい質問ですね。私も正直動物を sheで指すか、heで指すか、itで指すかの具体的かつ学術的判断基準はわかりませんので、本カテの他の優秀な回答者のお答えを楽しみしたいと思います。 個人的には 特に個人的に思い入れがなく、単なる動物の場合で性別がわかっていない場合=it 親しみがあり、まま擬人化する事もある身近な存在である場合= he or she としている様な気がします。最終的にはhim でも it でも差し支えないと思いますが記事の場合では it と無機質な言い方でも構わないではないかと思います。
