tollといいますと、普通は高速道路の料金のことです。 でも仰るとおり、take a toll onですと、被害を与えるという風になります。 http://www.thefreedictionary.com/taking+its+toll tollだけの意味を考えるなら、3.の An amount or extent of loss or destruction, as of life, health, or property (生命健康或いは財産における損失・破壊の量または程度。。。。です) 日本語で考えるとわかりにくくなりますので、以下の例文をざっと見てゆくと、 The recession isn't only taking a toll on the bottom line of American families. It's also hurting the relationships themselves. (the recession...a toll) These close games and squirrely finishes are going to take their toll on this team from a psychological standpoint. (games and finishes.....their toll) Years of sunbathing took a toll on Mary's skin (sunbathing.....a toll) Drug abuse takes quite a toll on the lives of people. (drug abuse.....a toll) Bringing up nine children had taken its toll on my mother. (bringing....its toll) "Poverty and inadequate health care take their toll on the quality of a community's health" (Los Angeles Times). (povery and healthcare......their toll) という風に、tollの前に着く語は主語に対応していることがわかります。 Environmental stresses are taking their tolls on insectですと、環境によるストレスは、(そのストレスの)被害を昆虫に与える。という、日本語には極めて訳しにくい意味になります。 イメージとしては、環境ストレスが虫達に、”環境ストレス”なる高速料金の負担をかけている感じです。それでも判りにくいでしょうか。 その日本語への直しにくさも含めての熟語であると、理解するしかないと思います。 お勉強、頑張ってください。

take one's toll は 「大きな影響を及ぼす」 という意味ですが、one はその影響の及ぶ対象を指しているはずです。 ですから、Environmental stresses are taking their tolls on the insects という文であれば、「環境ストレスはその昆虫たちに大きな影響を及ぼす」 となり、insects が複数形なので their が用いられています。
