アメリカに３５年ほど住んでいる者です。 困りましたね。 これは、cliche(決り文句,常套句)で、一度にたくさんの人がいると、結果として,悪い物が出来ちゃうよ,という意味なんですね。 シェフが多すぎるとスープはひどい物になるかもしれないけど,その中のたった一人でも焦げ付いて飲めないものにしちゃうよ。と言うのが文章の意味なんですが,それが転じて,始めの意味になり,最終的にJulia childさんのアドバイスとして,「もしあなたが料理をするのだったら,誰も台所に入れてはいけないし,手伝いもさせちゃいけないよ。入れると何が起こるか分からないし,結果として,せっかくのディナーが台無しになっちゃうよ。」といっているのですね。 彼女はテレビなどで,料理を教える異色的な存在ですが,その時の言葉と思います。 よく似た表現で,ちょっと違ったフィーリングの物で,too many chiefs and not enough Indians。があります。 この方は,監督だけ多くて現場の労働者がいなくてはしごとは成り立たないよ。と言う意味なんですね。 これでいいでしょうか。

これは先ず二つに分けないと理解しにくいかと思います。 Too many cooks spoil the broth とは、古い英語の諺で、日本語の「船頭多くして船山に登る」と同じような意味で、指導者が多すぎては、仕事ははかどらない、良い結果はでない、との意味でしょう。 一方、その諺を勝手に（？）改変して、ジョークぽくしたのが、 Too many cooks may spoil the broth,but it only takes one to burn it. で、ここでは、スープを作るのに、シェフが何人もいたら、皆違う味付けの感覚をもっているので、一緒にやればまずいものができる、又はうまくできない、又は、はかどらないと言う元の意味に加え、でも一人のシェフでもちゃんとやらなければスープを焦がしてしまうよ、（カレーだったら焦げるか(^^;)）と言う感じかと思います。 これはJulia Childさんが言ったようですが、"The Bad Cook's Guide" と言う料理の本の著者 Madeleine Binghamさんの言葉でもあるようです。 結論：料理はシェフ一人で十分だが、その一人のシェフの腕次第、みたいな？
料理人が多すぎるとスープの味がおかしくなってしまう（船頭多くして船山に上る）というが、スープを焦がしてしまうには、たった一人の料理人がいるだけで十分だ。 という意味だと思ったのですが、No.1の人の回答を見ると、違うようですね。 スープが焦げるのか？という疑問もあるし、「自信なし」です。
