先に (2) の方だけど, それでいいと思います. で (1) ですが, The one that says "Check Engine." の that は (one を先行詞とする) 関係代名詞です. で one は前の文の light を指します. 実は主語と動詞が省略されてるんだよね. 完全な文にすると That's the one that says "Check Engine." くらいかな.

既出の単語を省略する場合、the one か thatを使うと思いますが使い分けを教えて下さい。 例えば、「青い紙に書かれているserial No.と、赤い紙に書かれているそれ（serial No.）が違います」 という文章を書く場合、the one でしょうか？ thatが適切でしょうか？ 変な例文ですが・・・ The serial number written on the blue paper is different from the one/that on the red paper.
