that which は複合関係代名詞whatまたはwhateverの置き換えとして使われる硬い表現で、ここではwhateverの置き替えとして、~するものは何でも、と言う逆説的な副詞節を作っていると考えます。つまり、 若い頃、切望しなかった事は何であれ、 すると次の文は, 大人になってからその仕事をするのは簡単ではない。 もうちょっと日本語を整理すると、 若い頃に願ってもいなかった仕事に、大人になって簡単に就くことは無いだろう。
