次の日本語の英訳は正しいでしょうか??

1 と 1' ですが、文末が "his own eyes" となっています。ここで "his" は "a good cook" のことを指してしまうので「魚の目で判断する」という意味にはなりません。料理人が自分の目で魚を観察して、鮮度を判断する、という意味になってしまいます。また、"from his own eyes" よりも "by his own eyes" の方がよいでしょう。 また、1 においては、"a" と "is" が抜けています。(A good cook judges how fresh "a" fish "is" by his own eyes.) 2 と 2' においては文末が "from its eyes" となっているので、魚の目のことを言っていることがわかります。ただし、1 同様、2 は "a" と "is" が抜けています。 2' が最もよいと思いますし、意味も伝わります。 "cook" を "chef" とすると、職人的な料理人といったニュアンスが出るかと思います。 ⇒ A good chef judges how fresh a fish is by its eyes.
