基本的な訳はNo.1の方のでいいのですが、補足しますと Simons and Chabris の研究とはInvisible Gorillaに代表される見落とし現象のことです。 この現象の代表的なデモでは、映像中の特定の側面に注意を向けていると、その途中からかなり異様なものが映っても、それに気づかないことがあるということが示されています。 http://www.theinvisiblegorilla.com/videos.html そのことを踏まえて、2番目の文は「見るまでは信じられないだろうし、この場合は見えない(ということを体験する)までは信じられないだろう」という風に、「気づけない」という意味をこめて訳すのが妥当かと思います。

見たことがなかったとしたらまず信じることができないだろうし、 この場合では見たことがないわけでなかったとしても信じることができない類のものだ
