２回に分けて、回答します。 試訳：応募者が「家の手伝いをして、収入を得た仕事」がどれだけあるのか、それから、その仕事を達成するのがどの程度難しいのかを示す資料も（応募書類に）含めてください。 (1)the amount...doesとthe ease...completedは共に、indication ofのofの目的語となります。some indication ofは、something that indicatesと節概念に変換して考えると分かりやすいでしょう。 (2)(1)の二つの表現は、形式上は、the+名詞句＋関係節で、全体が名詞句を形成していますが、意味上は、疑問文が隠れています。専門用語では「潜伏文」と呼ぶ例です。書き換えると、 [what amount of homework] the applicant doesと[to what degree of difficulty] it is completedとできます。 ２つ目の名詞句に関して、or difficultyをとりあえず、脇に置いておくと、 the ease with which(易しさは易しさでも、その易しさを伴って）it is completed(仕事を達成する時の[易しさ]=>その仕事を達成する時に伴う易しさ=>その仕事の易しさ度）では、with ease(=easily)のeaseを関係詞化していますが、このように慣用表現が関係節で使われる時には、前置詞だけ文末に残し、withをcompletedの後に置いておくようなことはできません（この現象は、高校レベルでは扱いません）。 面白いのは、the ease with which...とすればそれでよいところを、わざわざ、the ease or difficulyとdifficultyを補っていることです。慣用的には、with easeの方が、with difficultyよりも使用頻度が高いので、関係節化の際には、easeが優先されましたが、この場合には、「易しさの度合い」を強調してしまうという意味上の問題から、補われたものです。 形容詞で考えますが、「程度の高い形容詞」と「程度の低い形容詞」の違いについて考えたことがありますか。これは、単に意味が反対ということではなく、前者は、次に見るように「ものを測定するときの尺度になれる」という特徴があります。 (1) How long is that bridge? （橋が長いかどうかではなく、橋の『長さ』を問題にし、ここのlongは尺度となっています） (2) How short is that bridge? （橋の長さが短いという前提で質問しています） 同様に、高さは高いとも、低いとも言えますが、低さがと言ったら意味は一つですね。そのことに気がつけば、問題の仕事は、非常に難しいかもしれないし、非常の易しいかもしれないが、どのへんの値なのか測定する意味をあらわすために、後にdifficultyが入っているのです。形式上の要請と意味上の要請から、回りくどい言い方になっています。
