多価不飽和脂肪酸とは?

「Polyunsaturated Fat」の意味を調べてみると、「多価不飽和脂肪」となっていました。 「多価不飽和脂肪酸」(PolyUnsaturated Fatty Acid、PUFA)と同義語なのでしょうか? また、今まで多価不飽和脂肪酸は、「オメガ3+オメガ6」の成分量と思っていたのですが、厳密には異なるのでしょうか?(商品の成分表示を見ると若干異なるようなのですが。) 商品例: Calories: 24 Calories from Fat: 24 Total Fat: 2.4 g Saturated Fat: 0.5 g Polyunsaturated Fat: 1.4 g Monounsaturated Fat: 0.5 g Vitamin E (as d-alpha tocopherol): 30 IU Total Omega-3 Fatty Acids: 870 mg ALA (Alpha Linolenic Acid): 550 mg EPA (Eicosapentaenoic Acid): 180 mg DHA (Docosahexaenoic Acid): 120 mg Other Omega-3s:20 mg Total Omega-6 Fatty Acids: 730 mg GLA (Gamma Linolenic Acid): 200 mg Linolenic Acid: 510 mg Other Omega-6s: 20 mg Total Omega-9 Fatty Acids: 490 mg Oleic Acid: 410 mg Other Omega-9s: 80 mg Lipase (activity 1,2000 LU): 15 mg 回答よろしくお願いします。

>やはり、多価不飽和脂肪酸=「オメガ3+オメガ6」というのは厳密には違うけれどもそれほど差はないんですね。 「厳密には違う」ではなくて、関係はないがたまたま同程度になると理解していただけると幸いです。 自然界にω3、6以外の多価不飽和脂肪酸が少ないので近くなるだけです。 >恐らく、Total Fatをエーテル等の溶媒で抽出測定しておき、別途ガスクロで測定した飽和脂肪酸:モノ不飽和脂肪酸:多価不飽和脂肪酸の割合をかけた数値でしょう。 Total Fat -> 抽出し重量を測定(Total Fat: 2.4 g) 飽和脂肪酸:モノ不飽和脂肪酸:多価不飽和脂肪酸の割合 -> ガスクロで測定(この例では約21%と58%、21%) で、 Saturated Fat =2.4×21% Polyunsaturated Fat=2.4×58% Monounsaturated Fat=2.4×21% という式で計算したのだと思います。 なお、加工食品の成分表示は原材料の成分表の値(標準的な分析値)を使って計算することもあるので、その場合上記で「測定」と書いてある部分は「原材料の成分値を元に計算。」と読み替えてください。

化学の分野では「Polyunsaturated Fat」、「多価不飽和脂肪」という表現は使わないと思います。食品の栄養表示で許されている表現かもしれません。 商品例では、 Total Fat=Saturated Fa+Polyunsaturated Fat+Monounsaturated Fat となっています。 恐らく、Total Fatをエーテル等の溶媒で抽出測定しておき、別途ガスクロで測定した飽和脂肪酸:モノ不飽和脂肪酸:多価不飽和脂肪酸の割合をかけた数値でしょう。(この方法では脂肪酸の総量=脂肪含量(Total Fat)としていますので、厳密には誤りですが、それほど大きな差もありません。)食品や飼料でこのような成分表示使うことはあると思います。 >多価不飽和脂肪酸は、「オメガ3+オメガ6」の成分量と思っていたのですが、 ほぼ近い値にはなりますが、オメガ3、オメガ6は二重結合が最初に現れるメチル基側から数えた炭素の位置ですから、多価不飽和ということと直接関係はありません。
