グアムホテルオークラのシェフは、 グアムには魚の成長を妨げる冬がないため、地元で揚がった魚は、 より温暖でない海域の魚に比べ、サイズが大きく、脂肪含有量が非常に 少ない傾向がある、ということに注意するだろう。 ●"ledd"は"less"の間違いではないですか? ご確認ください。 ●"would note"は文脈によっては別の解釈もありえます。

 ご自分の訳を掲げた上で、「この箇所がちょっと訳し難いんだけど、どのような表現が適切でしょうか?」とかいう質問なら分かりますが、丸投げは感心できることではありません。稚拙でも構いませんから、ご自分の訳を補足願います。  それから、翻訳サイトの訳を少し手直しした程度のものを「意訳」とは言いません。第一、「魚の成長の発育を阻害する」とか「非常に低い脂肪の含有量を持ち、」というのが、世間一般に通用する日本語だとお思いですか?  意訳するなら、もう少し日本語らしくしてやらないと、質問者が困るだけですよ。

グアムホテルOkuraのシェフが注目するように、グアムにはそれら魚の成長の発育を阻害する冬が全然ないので この方面(ローカル)で捕まえられた魚は(ledd?)の温和な水域で見つけられたものと比較して、非常に低い脂肪の含有量を持ち、 より大きくなる傾向があります。 多少意訳していますが、こんなものでいかがでしょう!
